Mushroom and Celery Cream Soup

Sometimes it's best to warm up with a healthy and nutritious soup made with fresh seasonal ingredients. A creamy mushroom and celery soup is a healthy and tasty refreshment.

Ingredients:
200 g mushrooms (champignons, oyster mushrooms...)
200 g celery root
1 potatoes (100 g)
1 carrot (70 g)
1 onion (100 g)
2 cloves garlic
7 tbsp olive oil
1 tbsp apple cider vinegar
2 bay leaves
1 tsp salt
1/2 tsp thyme

Preparation

  • First, prepare the vegetables by peeling and dicing the celery root, carrots, and potatoes.
  • Gently wipe the mushrooms with a dry cloth and cut them into smaller pieces. For a richer flavour, it's best to use two or more different types of mushrooms.
  • Then peel and finely chop the onion and garlic.
  • Pour olive oil into the pot and put it on medium heat. Add the previously chopped onion and sauté for 2–3 minutes.
  • Then add the chopped garlic. The garlic will smell good quickly, so immediately add the chopped celery, carrots, and potatoes.
  • Season with salt and thyme and add two bay leaves.
  • Mix everything and pour 500 ml of water. Cook on low heat for about 20 minutes, stirring occasionally.
  • Then puree the soup with a hand blender until it has a creamy texture.
  • Then pour in another 100 ml of water and 300 ml of milk. Stir and cook for another 5 minutes.
  • Towards the end of the cooking time, stir in a tablespoon of apple cider vinegar, which will add some freshness to the soup.

For a richer flavour, it is best to combine two or more different types of mushrooms, each contributing to the flavour harmony. To make the soup in the photo, I chose champignons and oyster mushrooms. Champignons or white button mushrooms, are the best known and most readily available. Their mild but distinctive flavour makes them suitable for preparing many dishes. Oysters, on the other hand, are known for their slightly stronger, bittersweet taste, which will further enrich the aromatic soup. As can be seen from the ingredients, it is not necessary to add a special broth to make mushroom and celery soup. Since we do not always have homemade broth on hand and store-bought cubes are often not the healthiest option, we can choose aromatic vegetables such as celery, carrots, and onions to achieve the desired taste. In this recipe, celery root plays an important role as it complements the dominant taste of mushrooms with its aromatic flavour. Celery is known as an extremely healthy plant, and it is an important part of numerous stews and soups due to its strong but pleasant flavour. Besides the essential salt, thyme is a suitable spice for mushroom dishes and also enriches this soup with its intense flavour. Another valuable spice is bay leaf, which gives off its aroma during cooking.
