Rice and Avocado Sauce Stuffed Mushrooms

Champignons are very nutritious and one of the most accessible from the wonderful world of mushrooms. They enrich many dishes with their taste and, stuffed with a fine sauce, are a real delicacy.

Ingredients:
800 g medium-large champignon mushrooms
150 g rice
1 avocado
150 g cottage cheese
1/2 lemon
1/2 tsp salt
1/2 tsp pepper
Fresh basil and parsley leaves

Preparation

  • Heat the water in a pot to boiling and add the rice. Cook for about 10 minutes, according to package directions.
  • Wipe the mushrooms lightly with a dry cloth and separate the stems from the cap.
  • Chop the mushroom stems. Add some olive oil to the pan and place over medium heat. Add the chopped stems and fry over low heat for about 5 minutes.
  • Peel one avocado and mash it in a bowl. Stir in the cottage cheese and some lemon juice.
  • Strain the cooked rice and mix with the avocado sauce.
  • Add previously fried mushroom stems and a tablespoon of parmesan cheese to the sauce. Season with salt and chopped fresh basil or parsley leaves. Stir everything together.
  • Fill the mushrooms with the prepared sauce and sprinkle with some parmesan cheese.
  • Bake in a preheated oven at 180°C (356°F) for about 20 minutes.

Serve the sauce left after stuffing with fried mushrooms and enjoy a healthy and tasty meal. When preparing mushrooms, it is best not to use too many spices so that we can enjoy the natural taste of fine mushrooms. In addition, it is generally recommended to eat the prepared mushrooms the same day and not reheat them, so it is best to enjoy stuffed mushrooms while the dish is fresh.

It is known that not all mushrooms are edible. So, in order to collect them in nature, we need a good knowledge of edible and poisonous mushrooms. Therefore, cultivated mushrooms are the easiest way to safely enjoy their benefits. Champignons are low-calorie, high-nutrient mushrooms that grow in nature from June to October, while cultivated mushrooms are affordable and available year-round. Like all edible mushrooms, they contain high levels of protein, which makes them suitable as a meat substitute. Diverse and colorful hats with their unusual appearance contribute to the magical forest atmosphere. Personally, I am attracted by their mystery and wonderful role, which makes them a real treasure of the forest. Among other things, fungi feed on dead organic matter, decomposing fallen leaves and rotting logs, , making them decomposers necessary for maintaining life cycles. Considering their important role in nature, the diverse and mysterious fungi deserve our admiration and respect.

When we walk through the forest, we are often unaware that we are walking across an underground network of plant roots and fungi through which trees and other plants communicate with each other. Life in the forest is far more magical than we can see, and we have mushrooms to thank for that. So the next time you go for a walk in the forest, it is worth paying attention to the mysterious realm of mushrooms. However, without excellent knowledge, it is safer to just observe them and eat the ones from cultivation or designated mushroom experts.
