Spinach Cream Soup

Eat more greens with a nice, creamy soup made from fresh spinach. This nutritious and tasty soup, with a fine and rich texture, is a real vitamin boost.

Ingredients:
300 g fresh spinach
400 ml milk
4 tbsp olive oil
2 onions (200 g)
2 cloves garlic
100 g potatoes
100 g celery
1 carrot (100 g)
1 tsp salt
1/4 tsp pepper
Fresh leaves of parsley, celery or dill

Preparation

  • Peel onions, potatoes, carrots and celery, and chop into smaller cubes.
  • Pour olive oil into the cooking pot and heat to medium. Then add the pre-chopped onion and simmer over low heat for about 3 minutes.
  • After that, add the rest of the chopped vegetables. Mix everything together, then pour half liter or about 2 cups of water. Season with salt and pepper, and leave to cook for 10 minutes.
  • In the meantime, wash the fresh spinach leaves and cut into smaller pieces.
  • Add the spinach to the water and cook all together for another 15 minutes.
  • When the vegetables are cooked, mix everything with a stick mixer to get the desired density. Optionally, at the end, you can mix the soup in a blender.
  • Then pour 2 cups of milk. Soy milk was used to prepare the recipe from the picture, but you can also use some other milk as desired.
  • Additionally, add fresh leaves of parsley, celery, dill or some other herbs.
  • Cook while stirring, until the water and milk boil, then turn off the heat.
  • If you have not used a stick mixer, mix the soup in a blender to get a fine creamy texture.

Before mixing, you can add a few fresh spinach leaves to boost the vitamin dose. Enjoy the taste and fine creamy texture of this healthy soup.
