300 g fresh spinach |
400 ml milk |

2 onions (200 g) |

100 g potatoes |
100 g celery |

Preparation
- Peel onions, potatoes, carrots and celery, and chop into smaller cubes.
- Pour olive oil into the cooking pot and heat to medium. Then add the pre-chopped onion and simmer over low heat for about 3 minutes.
- After that, add the rest of the chopped vegetables. Mix everything together, then pour half liter or about 2 cups of water. Season with salt and pepper, and leave to cook for 10 minutes.
- In the meantime, wash the fresh spinach leaves and cut into smaller pieces.
- Add the spinach to the water and cook all together for another 15 minutes.
- When the vegetables are cooked, mix everything with a stick mixer to get the desired density. Optionally, at the end, you can mix the soup in a blender.
- Then pour 2 cups of milk. Soy milk was used to prepare the recipe from the picture, but you can also use some other milk as desired.
- Additionally, add fresh leaves of parsley, celery, dill or some other herbs.
- Cook while stirring, until the water and milk boil, then turn off the heat.
- If you have not used a stick mixer, mix the soup in a blender to get a fine creamy texture.
Before mixing, you can add a few fresh spinach leaves to boost the vitamin dose. Enjoy the taste and fine creamy texture of this healthy soup.
