400 g squid |
200 g zucchini |
1 onion (100 g) |

Preparation
- If you have unpeeled squid, make sure to clean them first. Cut the cleaned squid into rings.
- Peel the onion and garlic and chop finely.
- Peel the carrots and chop into small strips.
- Pour a little bit of olive oil into the pan and heat to medium. Add the pre-chopped onion to the heated pan. Simmer over low heat for about one minute.
- Then add the chopped carrots and simmer for another two minutes.
- After that, add the pre-chopped garlic. The garlic will smell quickly, so you can immediately add the squid as well. With occasional stirring, sauté the squid over medium heat for 8-10 minutes.
- Wash the zucchini and peel them if necessary. Zucchini peel contains valuable nutrients, so if you have homemade unsprayed zucchini, it is best not to peel them. Chop the zucchini into smaller cubes and add them to the pan with squad. Simmer all together for an additional 5 minutes.
- Season everything with a teaspoon of salt and turmeric, and stir.
- Then pour 1dl of white wine and cover the pan, leaving a little slit. In this way, squid and vegetables will be both, stewed and steamed. Leave to simmer for 20 minutes, occasionally adding water if needed (up to 1dl).
- Finally, pour a few drops of lemon juice over the dish.
As a side dish, cooked rice will provide a good balance of flavors. For additional wine enjoyment, you can serve a white wine of your choice.
