- When the water with the wild berries boils, pour in the whipped mixture while stirring. While stirring gently, continue to cook for about 2 minutes until everything thickens enough. Turn off the heat and let it stand for at least 5 minutes.
- After that, sweeten the filling with a spoonful of honey or some other healthy sweetener.
- When you take the biscuit base out of the oven, pour the prepared wild berry filling over the base and spread it evenly with a spoon.

- Place dry biscuits on top of the filling. Before stacking, dip each biscuit in cold milk. A smaller bowl with approx. 1dl of milk should be enough for dipping.

- Take the boiled potatoes out of the water, then reuse the water by adding cauliflower, carrots, and celery to the same pot. Cook for about 5 minutes.

- Take the cooked vegetables out of the water and cut them into smaller pieces. Cut the potatoes and celery into cubes, the carrots into rings, and the cauliflower into small flowers.

- In a pan, heat a few drops of oil, then add a spoonful of the crepe mixture and bake on one side only.

- Repeat the process until you have rolled all the crepes. It is optimal to use 8–10 crepes for a roll.
- Wrap the roll in transparent foil and cool it in the refrigerator.

During preparation, the crepes should be baked only on one side so that the other side remains softer, which will allow the crepes with the filling to be more easily connected into a roll.

We have to wait until spring to enjoy the view of the flower fields and gardens, but until then, we can enjoy delicious sweets with poppy seeds.

- Pluck the grape berries and soak them in water with a spoonful of apple cider vinegar.

Melon and Carrot Smoothie

- Wash the zucchini well, then grate it. Optionally, you can peel the zucchini beforehand. However, if you have organic zucchini, feel free to leave the peel as it is rich in valuable nutrients.
- Add 2 eggs and a teaspoon of salt and mix with the grated zucchini.
- Pour in the milk, then add the wheat and corn flour and stir gently. The zucchini will release its water, which together with the milk will be enough to prepare a moderately thick mixture.
- Finally, add two tablespoons of olive oil and half a bag of baking powder. Mix everything lightly.
- Coat the baking pan with olive oil and pour in the prepared mixture. The baking pan in the photo is 34x20 cm in diameter, so you can use a similar sized pan.
- Bake in a preheated oven at 180 °C (356 °F) for 30 minutes.

Crustless zucchini pie is a fantastic recipe with traditional flair to enjoy the zucchini season. Simple, tasty and light, zucchini pie is an excellent choice for hot summer days.

Crustless Zucchini Pie

- To begin, prepare clean jars and disinfect them by adding them to boiling water. Then leave the jars to dry on a clean cloth.
- Wash the fresh berries and add them to the cooking pot. Heat over low heat while kneading the fruit with a fork or kneader until it becomes a liquid mixture.
- When the mixture boils, stir in the chia seeds. Stir gently for about 3–5 minutes until you get the right density. In addition to nutritionally enriching jam, chia seeds serve well as a natural thickener.
- Towards the end, squeeze the juice of half a lemon and sweeten with honey as desired. Stir everything and turn off the heat.
- Pour the freshly prepared jam to the top of a clean jar and seal well.
 
Leave the jar to cool at room temperature, then store it in a dark, cool place. Although you will definitely want to enjoy the jam as soon as possible, an adequate storage process is useful for saving a larger amount for later. Homemade berry jam is naturally sweet, healthy, and refreshing. Sweet jam is quick and easy to prepare and can be enjoyed fresh or stored for the winter.

Berry Jam

- Heat the water in a pot to boiling and add the rice. Cook for about 10 minutes, according to package directions.
- Wipe the mushrooms lightly with a dry cloth and separate the stems from the cap.
- Chop the mushroom stems. Add some olive oil to the pan and place over medium heat. Add the chopped stems and fry over low heat for about 5 minutes.
- Peel one avocado and mash it in a bowl. Stir in the cottage cheese and some lemon juice.
- Strain the cooked rice and mix with the avocado sauce.
- Add previously fried mushroom stems and a tablespoon of parmesan cheese to the sauce. Season with salt and chopped fresh basil or parsley leaves. Stir everything together.
- Fill the mushrooms with the prepared sauce and sprinkle with some parmesan cheese.
- Bake in a preheated oven at 180°C (356°F) for about 20 minutes.

Serve the sauce left after stuffing with fried mushrooms and enjoy a healthy and tasty meal. When preparing mushrooms, it is best not to use too many spices so that we can enjoy the natural taste of fine mushrooms. In addition, it is generally recommended to eat the prepared mushrooms the same day and not reheat them, so it is best to enjoy stuffed mushrooms while the dish is fresh.

It is known that not all mushrooms are edible. So, in order to collect them in nature, we need a good knowledge of edible and poisonous mushrooms. Therefore, cultivated mushrooms are the easiest way to safely enjoy their benefits. Champignons are low-calorie, high-nutrient mushrooms that grow in nature from June to October, while cultivated mushrooms are affordable and available year-round. Like all edible mushrooms, they contain high levels of protein, which makes them suitable as a meat substitute. Among other things, fungi feed on dead organic matter, decomposing fallen leaves and rotting logs, , making them decomposers necessary for maintaining life cycles. Considering their important role in nature, the diverse and mysterious fungi deserve our admiration and respect.

When we walk through the forest, we are often unaware that we are walking across an underground network of plant roots and fungi through which trees and other plants communicate with each other. Life in the forest is far more magical than we can see, and we have mushrooms to thank for that. So the next time you go for a walk in the forest, it is worth paying attention to the mysterious realm of mushrooms. However, without excellent knowledge, it is safer to just observe them and eat the ones from cultivation or designated mushroom experts.

Rice and Avocado Sauce Stuffed Mushrooms

- Bring a pot of lightly salted water to a boil, then add the pasta. Cook for about 15 minutes, depending on the instructions on the package.
- If you want to add chicken to the salad, cut the chicken breast into smaller cubes and season with salt. Heat the olive oil in a pan over medium heat and add the chopped chicken. Stirring occasionally, fry for about 20 minutes on low heat.
- In the meantime, prepare fresh vegetables. Clean and wash all the vegetables well, and peel the carrots. Chop the spring onions, radishes, and carrots into rings. In a bowl, mix the chopped vegetables and fresh arugula and lettuce.
- Cut the feta cheese into cubes, then add it to the bowl with the vegetables. Pour a little bit of olive oil over everything.
- In a separate bowl, prepare a sauce of yogurt, mustard, and herbs. Chop fresh herbs like chives, parsley, and/or dill and combine with 2 dl yogurt and 1 tablespoon mustard. Season the sauce with a little bit of salt.
- Strain the cooked pasta and mix it together with the vegetables, as well as the prepared chicken.
- Pour in the previously prepared sauce and mix everything together.
- Finally, pour a few drops of lemon juice over everything. Additionally, you can decorate the salad with fresh leaves of parsley, dill, or other herbs of your choice.

You can modify the spring salad's ingredients to fit your diet. For example, in the vegetarian version, you can exclude the chicken or replace it with smoked or marinated tofu. If you want a salad suitable for vegans, you can use vegan yogurt instead of plain yogurt. What is common to each version is the abundance of fresh green vegetables in their fresh and raw form, which gives us the opportunity to enjoy the benefits of healthy spring fruits to the fullest.

Fresh spring fruits are a symbol of spring and the awakening of nature, when everything around us is full of life. Nature is waking up, trees are blooming, and gardens and markets are full of seasonal vegetables. Of course, the benefits of fresh vegetables are greatest if we have grown them ourselves without the use of harmful chemicals or purchased them from local producers we trust. If you live in urban areas without much space, herbs and some vegetables can be relatively easily grown on the balcony or even the window sill. Every year, the kitchen window of my apartment is filled with a variety of herbs that I use regularly when cooking.

In larger pots with provided drainage, it is relatively easy to grow vegetables such as spring onions, arugula, spinach, chard, and even radishes. Plants fill the space with greenery and bring a touch of nature into our home. If they are also edible, the pleasure that comes from nurturing them becomes greater. It is a truly fantastic feeling when you pick herbs from the window at one point and add them to a dish at another. Hopefully, I'll write a little more about this process on another occasion.

Spring Salad

- Bring the water to a boil in a saucepan, then turn off the heat. Put the cocoa butter in a small bowl and place the bowl over the boiling water so that the butter melts slowly in the steam.
- Add the cocoa powder to the melted butter and mix gently until combined. If you are making milk chocolate, along with the cocoa powder, also add the milk powder.
- Sweeten with honey or maple syrup and stir gently until the selected sweetener dissolves well and blends with the other ingredients. Optionally, you can mix in some sweet spices, like vanilla and cinnamon.
- Place the silicone mold on a flat, portable surface (e.g., a tray) and pour the prepared chocolate mixture into the mold. Slowly place the tray with the mold in the refrigerator and allow it to cool for at least 1 hour.

There are many healthy and creative ingredients you can use to enrich homemade chocolate. After pouring the chocolate mixture into the mold, there's a dark canvas in front of you where you can express your creativity. Paint the chocolate with nuts, dried berries, or your favorite seeds. A favorite treat of many can be easily prepared at home. Whether we choose dark or milk chocolate, the preparation gives us the opportunity to give free rein to our creativity.

Homemade Chocolate

- Put slightly salted water in the pot to heat, then prepare the necessary vegetables.
- Wash the leeks well, especially between the leaves where traces of earth are usually hidden. Including the stem and leaves, chop the leek into small rings or strips.
- Clean the mushrooms with a dry cloth, then chop into slightly thicker rings (approximately 3-5 mm). You can cut larger pieces in half.
- Wash the Brussels sprouts and remove the outer leaves. Cut off the top of the Brussels sprouts and cut them in half.
- In heated water, add the cleaned Brussels sprouts and boil briefly for about 10 minutes, then remove them from the water.
- Cook the pasta according to package directions, reusing the Brussels sprouts water.
- To make the sauce, heat the olive oil in a saucepan over medium heat.
- Add the pre-sliced leeks and simmer on low heat for about 5 minutes.
- Then add the sliced mushrooms and, stirring occasionally, simmer for about 15 minutes.
- Towards the end, pour about half a glass of white wine and add pre-boiled Brussels sprouts. Stir everything together.
- Season with salt, thyme, or another suitable spice, such as marjoram, basil, or parsley.
- Drain the cooked pasta and add to the pan. Mix everything together well and sprinkle a little Parmesan cheese over everything.

- Peel the potatoes and place them in a pot of lightly salted water to boil. If desired, you can replace part of the potato with a sweet potato. Sweet potatoes need a slightly shorter cooking time, so you can put them in water 5 minutes after the potatoes. Keep in mind that sweet potatoes have a slightly thinner texture, so with more potatoes, the dough will be easier to shape. Cook for about 20 minutes, until the potatoes are soft.
- Drain and mash boiled potatoes and sweet potatoes, then leave to cool to room temperature.
- In the cooled mashed potatoes, add 2 eggs and 2 tablespoons of oil and stir.
- Then add the flour and mix everything together into a compact mixture.
- From the dough, form dumplings and add one to two cherries to each. If the mixture seems sticky, you can make shaping easier with a little bit of flour.
- Heat slightly salted water in a pot until it boils, then add the shaped dumplings. Cook for about 15 minutes.
- Meanwhile, heat the oil in a pan over medium heat and add the bread crumbs. Alternatively, you can replace the bread crumbs with ground biscuits or ground oatmeal. Additionally, you can mix in some ground hazelnuts or other nuts.
- To make it sweeter, add one to two tablespoons of sugar. Instead of ordinary sugar, you can choose some healthier alternatives like coconut or birch. Fry everything together briefly for one to two minutes, then turn off the heat.
- For a more colorful dumpling look, you can color the crumb mixture with cherry aroma or cherry juice.
- Drain the cooked dumplings and roll them in the previously prepared crumb mixture.

Even when a healthy diet is important to us, we all have favorite desserts for which we sometimes make exceptions. For me, it's dumplings. :) However, with the addition of healthier ingredients, we can enrich each dessert with nutrients and make the whole meal healthier. When preparing dumplings, we can replace part of the potato with its relative, the sweet potato, which is known for its beneficial effects on health. Regular flour can be replaced by some wholegrain flour, such as wholegrain spelt flour. In addition, the dumplings can be rolled in wholemeal breadcrumbs, ground wholemeal biscuits, or ground oatmeal. For a sweeter taste, we can choose healthier versions of sugar, such as coconut or birch sugar, and ultimately enjoy a healthier version of our favorite dessert.

- First, wash the leeks well, especially between the leaves, where there are usually traces of soil. To prepare the stew, use the whole leek, from stem to leaves, because every part is nutritionally valuable. Then finely chop the leeks.

- Add some olive oil to the saucepan and heat it over medium heat. Add the previously cut leeks and simmer on low heat for about 2–3 minutes.
- Then add the diced potatoes and carrots and mix everything together. Simmer for another minute, then add a glass of water (about 2 dl) so that the vegetables are covered.
- Add the bay leaf and season with salt. Cook for about 20 minutes until the vegetables are soft.
- When the vegetables have softened, mash them with a kneader or hand blender to a fine, thick paste.
- Then add about 700 ml of water, depending on the desired density of the stew.
- Add a teaspoon of turmeric and season with additional salt if necessary. Mix everything well.
- After the stew comes to a boil, cook for another 5 minutes.

- Before you begin, make sure you have a dry peel of an organic orange on hand. It is definitely recommended to use organically grown oranges because their peel is not treated with harmful ingredients. Wash and dry the orange well, then peel it by capturing the white part as little as possible, as it is usually a little bitter. The easiest way to dry orange peels yourself is to leave the peel for 1-2 days by the stove or on the radiator. Alternatively, you can explore the possibility of drying in the oven or dehydrator. Once dried, store the orange peel in a closed glass jar.
- Add 1 teaspoon of dried orange peel to a cup and pour hot water over it. Season with 1-2 cloves and half a cinnamon stick. Cover the cup and let it stand for 5 minutes.

- Add coconut oil and mix it well with a spoon or your fingers.
- Then, pour a few tablespoons of milk, enough to bind the mixture. Knead the mixture and shape the dough into a ball.
- Sprinkle a little bit of flour on a clean surface. Then, roll out the dough with a rolling pin to a thickness of about 5 mm.
- Using molds, shape the dough and place it on a baking sheet lined with parchment paper. If you don't have molds, you can use an ordinary cup to shape round cookies.
- In the preheated oven at 180°C (356°F), bake the cookies for about 10 minutes.

- Peel the apples, chop them into pieces and put them in a blender. If you have homemade unsprayed apples, it won't matter if you just wash them and add them with the peel. In fact, apple peel is very healthy containing most of the fiber and many other valuable nutrients.
- For a sweeter taste, add a teaspoon of honey to the blender. Sweet apple varieties already contain a sufficient amount of natural sugar, so there is no need to overdo it with additional sweetening. However, one teaspoon of honey can complement the taste of the sweet spread.
- Finally, add a teaspoon of cinnamon and a little bit of lemon juice. If necessary, you can also add a little bit of water (up to 1dcl). Mix everything together for about half a minute, and the spread is ready.

Unlike the traditional preparation when the jam is cooked for a long time, this healthier and simpler version takes only a few minutes. You can use it for spreading on bread or as a side dish to other meals. The spread can be stored in the refrigerator, in a closed container, for 5-7 days.

- Add spelled flour, dry yeast, salt and seeds to the bowl.
- Then pour about 2 cups of water and a little olive oil. Stir the mixture with a spoon until it is compact. The dough will be sticky, but that's exactly how it should be.
- Cover the bowl with a towel and leave it in a warm place for at least 1 hour for the dough to rise.
- After that, toss the raised dough on a clean surface that you previously covered with a little flour. Knead the dough briefly and shape as desired. Pyrrhic flour has a lower gluten content than wheat flour, so it is not necessary or recommended to knead it for too long.
- Prepare a baking tray and line it with a baking paper. Transfer the shaped dough to the baking paper, place in a preheated oven at 200 degrees, and bake for 50 minutes.
- When the bread is baked, sprinkle it with a few drops of water and then cover with a clean towel until it cools.

- Additionally, add fresh leaves of parsley, celery, dill or some other herbs.
- Cook while stirring, until the water and milk boil, then turn off the heat.
- If you have not used a stick mixer, mix the soup in a blender to get a fine creamy texture.

Add extra sweetness with honey or use other sweetener as desired and mix everything well.
- Then add the baking powder and mix it into the mixture with a spoon.
- Pour the prepared mixture into a baking pan and place in the oven at 180 ° for about 30 minutes.
- Before removing the base from the oven, prepare the chocolate topping by pouring half cup of milk and a few cubes of dark chocolate into a bowl and melt over low heat while stirring.
- When the base is ready, pour the previously prepared chocolate topping over it.
- Finally, cover the baking pan with a dish cloth and leave for at least 30 minutes for the cake to cool.

Cut the cake into cubes, serve and enjoy the irresistible taste of hazelnuts and chocolate.

- Wash the cauliflower and put it into boiling water. Cook over low heat for about 10 minutes until the cauliflower gets soft.
- During this time, chop the onion into rings and slice the mushrooms. Heat the oil in a pan to medium heat and add the pre-chopped vegetables. Then add 1-2 tablespoons of soy sauce. With occasional stirring, simmer over low heat for about 15 minutes.
- Slice the eggplant into half-rounds and chop the garlic into small pieces. Add them together in the pan, stir, and simmer for another 5 minutes or so.
- Drain the pre-cooked cauliflower, add to the pan and stir.
- Add salt as desired and season with a little bit of basil.
- Turn off the heat and pour a little bit of olive oil and lemon juice over everything.
- Finally, chop the almonds or walnuts into small pieces and sprinkle over the mixture.

- Before cooking, it is advisable to soak the lentils in water for two hours, so it is good if you can do it earlier. Soaking will reduce the cooking time and make the lentils easier to digest. After that, change the water and cook the lentils. However, if you cook without pre-soaking, just make sure you wash the lentils well before that.
- When the water boils, it is enough to cook the lentils for 20 to 30 minutes.
- Peel the potatoes and, if they are bigger, cut them into smaller pieces. Cook in lightly salted water until softened, which usually takes about 20 minutes.
- Peel the onion and garlic and chop them into small pieces.
- Near the end of cooking lentils, heat the olive oil in a pan to medium heat and add the previously chopped onion. Saute over low heat for about 3 minutes.
- Then add the chopped garlic. The garlic will start to smell good quickly, so pour the peeled tomatoes or tomato juice into the pan. Stir.
- Season with 2 tablespoons of soy sauce. If you don’t have soy sauce on hand, you can season it with a little bit of salt depending on your taste. With occasional stirring, simmer over low heat for about 5 minutes.
- Strain the cooked lentils, then add them to the pan. When you mix the lentils well into the sauce, turn off the heat.
- Strain the boiled potatoes, then mash them with a kneader or mixer. Add a cup of milk and season it with a little bit of salt as desired.

Serve the lentils in tomato sauce together with mashed potatoes and enjoy this healthy and delicious combination. In addition, you can serve a fresh green salad topped with a few drops of olive oil and apple cider vinegar.

- After that, add enough water to cover the yellow beans. In a half-covered pan, cook over low heat for about 15 minutes.
- Towards the end of cooking, beat the eggs in a cup, then add them to the stew while stirring.
- To achieve the appropriate density, mix 3-4 tablespoons of flour in a cup of cold water and, as in the previous step, add to the stew while stirring.
- Pour yogurt (or milk) into the stew and stir again.
- Season the stew with salt, pepper, turmeric, and other spices as desired.
- Finally, mix in a tablespoon of apple cider vinegar, which will give the stew extra freshness.
