Preparation
- To prepare the base, break the eggs and carefully separate the whites from the yolks. First, mix the egg whites in a bowl, then gradually add the sugar. Mix for several minutes until you get a foamy mixture. Then gradually add the other ingredients: spelt and coconut flour, egg yolks, milk, and coconut oil. Mix everything together.
- At the end, add baking powder and mix it in gently with a spoon.
- Pour the prepared mixture into a pan and bake it in a preheated oven at 180°C for 30 minutes.
- To prepare the chocolate coating, add dark chocolate cubes, milk, and coconut butter or oil to the pot. Stir gently until the chocolate is melted and combined with the other ingredients. Dark chocolate will give the topping a characteristic bittersweet taste. If you want a slightly sweeter version, you can mix in some honey or another healthy sweetener.
- Cut the baked biscuit into smaller cubes. Roll each cube, first in the chocolate mixture, then in the coconut crumbs. Place them on a clean plate and let them cool.
The prepared cakes are best kept in the refrigerator in a closed container or covered with aluminum foil or plastic wrap. As can be seen from the ingredients, the sponge cake base is made by choosing healthier ingredients, mostly coconut-based. The combination of white spelt flour and coconut flour, along with coconut milk, gives the base an irresistible coconut aroma. Both selected flours contain high levels of easily digestible fiber, as well as numerous other valuable nutrients. However, you can also use any other flour that you have on hand. Likewise, you can substitute the coconut milk with another milk of your choice. If you are looking for a flavorful substitute, one of the nut milks is also suitable.
The cocoa powder not only contributes to the rich flavor, but also gives the pastry its characteristic chocolate color. In addition, dark chocolate with a high cocoa content was chosen for the chocolate coating. If you like the natural taste of cocoa, you can enjoy the bittersweet flavor of the chocolate coating. If you want a slightly sweeter option, you can add some honey or another healthy sweetener to the coating. As with the sponge base, you can use coconut milk or another milk of your choice. Finally, coconut flakes create the most important and recognizable look to the coconut cubes.
